Ingredients
2 large eggs
1/2 cup of milk(1% or 2%)
1/4 of a red bell pepper,thinly diced
1 teaspoon of fresh basil, thinly sliced
1 teaspoon of cheddar cheese, grated
1 pinch salt and pepper
1/8 cup of cut broccoli,cooked(preferably smaller bits)
Preparation
Break the eggs and seperate the yolks from the whites. (check for bits of shell before continuing.) Pour the whites into a medium sized bowl and whip them until they’re frothy.Slide the yolks into the same bowl as the whites, pour the 1/2 cup of milk in and whip them all together, until it becomes a a light yellow/orange.
Set the stove to medium heat and melt a little butter on a meduim sized skillet. Spread the butter around evenly with a spatula. Pour the egg onto the skillet so it covers the bottom of the skillet completely.Wait 25-30 seconds, then add the pepper, basil,broccoli,and cheese(make sure the toppings are spread out on the omelette so the flavour is even). Cover the skillet with a plate large enough so you can put it on and no steam comes out. Let it cook for 2-3 min., then take the plate off and put it aside. If the omelette isn’t cooked enough, put the plate back on for 1 min. or so.
Take a spatula and gently loosen up half of the omelette(be careful not to rip the omelette.) lift up that half of the omelette and fold it over onto the rest of the omelette. Now you can loosen up the other side of the omelette and flip the omelette over so both sides can cook evenly. When the omelette is a nice light brown, take it off the stove and put it on a plate.
Sprinkle just a little salt and pepper on the omelette and serve warm.
