Ingredients

Waffles:

3 C Whole wheat flour (best when freshly ground)

1 T Baking Powder

3/4 T Salt

1/3 C Chopped Walnuts

1 1/2 C Milk

1 1/2 C Buttermilk

1/4 C Olive oil

3 Eggs

Homemade Syrup (better than store bought):

1 C Sugar

1/2 C Water

1/8 t Maple flavoring

1/8 t Vanilla flavoring

Preparation

Waffles: Separate the egg whites and beat until fluffy. Beat together all the remaining ingredients until smooth. Fold in the egg whites. Fill a waffle iron and bake until golden brown. Serve with unsweetened applesauce and homemade syrup (see below)

Homemade Syrup: Heat a small pot on high heat. Add sugar and heat until you see brown melted liquid or until a tiny bit of smoke appears (slightly burn the sugar). Immediately add the water. Stir in the maple and vanilla flavorings. Bring to a boil then simmer until all sugar pieces are dissolved. Store unused syrup in a container with a lid in the cupboard.
