Ingredients
1 cup sugar
1 teaspoon baking soda
1 egg
1 cup crunchy peanut butter
1/4 cup sugar (separate use)
Preparation
Preheat oven to 350 degrees.
Stir together sugar and baking soda. Add egg and peanut butter and stir together with a big spoon or rubber spatula.
Put 1/4 cup sugar in small bowl.
Drop by rounded teaspoonfuls (I use a small cookie scoop) into bowl of sugar. Roll around to coat and then place on cookie sheet. Press down each cookie with the tines of a fork one way and then the other to make the traditional hash marks.
Bake 8-10 minutes or until just starting to brown.
Allow to cool for about 3 minutes in pan, then remove to wire rack to cool.
