Ingredients

2 pounds Flounder

1 16 ounce bag of Egg Noodles

1 Spanish or Yellow Onion

1 pound fresh Mushrooms Parsley

1 pintSour Cream

Salt and Pepper, to taste

2 Tablespoons Paprika

Parsley, for garnish

Preparation

 Boil the egg noodles and place them on serving platter, covered, keeping them warm until fish is ready.  Sauté onions, mushrooms and paprika, being careful not to burn the paprika. When onions are translucent, remove half the mixture and set aside.  Turn heat down and lay flounder fillets on top of onion mixture  Cover and cook slowly until the flounder is cooked.  Place flounder fillets over the noodles, keeping warm  Return remaining onion mixture to skill. Add sour cream, salt and pepper.  Simmer until the sauce is thoroughly blended, add more paprika, if necessary.  Pour sauce over the fish and noodles.  Garnish with chopped parsley .
