Ingredients

4 Sliced of bacon, chopped

3 Cloves garlic, minced

1 medium onion, chopped

1 (14oz) can chopped spinach

3 (14.5oz) cans chicken broth

1 (15-16oz) can of each: Cannelini, Light Red Kidney Beans, and Dark Red Kidney Beans, all drained and rinsed

1/2 Cup Sun-dried tomatoes, cut in thin strips

1 Tsp. Dried Basil

Crushed red pepper flakes and salt, to taste.

Garnish: Shredded Parmesan Cheese

Preparation

Brown bacon over high heat in large stockpot, about 8 miutes. Add garlic and onion, saute 6 minutes. Add spinach, saute 2minutes mixing in brown bits. Add bead and all remaining ingredients. Simmer 10 minutes. Garnish and serve!
