Ingredients
2 cups milk.
3 eggs
1/4 cup sugar
1 teaspoon vanilla.
Caramel coating:
1/2 cup sugar
Preparation
Scald milk. Beat eggs slightly; mix in sugar, add slowly to hot milk, stir. Add 1vanilla. Pour into coated mold (see below.) Put mold in large baking pan and pour very hot water into pan 1" deep. Bake 325°, 50-60 minutes. Metal knife should come out clean. Chill, then unmold.
Caramel coating: Put 1/2 cup sugar over low heat in light-colored skillet. Move around with wooden spoon. Pour quickly into mold and tilt back and forth. Pour flan into mold.
