Ingredients

1 lb. mixed mushrooms

4 fillets firm white fish, cod, bass

one bunch green onions

2 T butter

1 lemon

Parchment paper

Preparation

Thinly slice mushrooms and onions. Saute in butter till brown. Season to taste with salt and pepper. Tear 4 pieces of parchment paper about 12" square each. Fold paper in half. Put one fish fillet on each piece of paper. Top each fillet with mushroom mixture. Squeeze a little lemon juice over mushroom mixture. Fold paper over and pinch edges tight. Put on a baking sheet and bake in a 375 preheated oven for 15 to 20 minutes depending on the thickness of the fish. To serve slide packages onto plates and carefully (due to steam) peel back paper. You can also take the fish out of the “bag” and serve alongside rice.
