Ingredients
3 tbsp olive oil
3 tbsp butter
6 fish fillets (flounder or sole)
1 clove garlic
12 wafer-thin slices green ginger, or 1 tsp ground ginger
1 ½ tbsp sugar
1 tbsp apple cider vinegar
2 ½ tbsp soy sauce
1 tbsp cornstarch
6 tbsp water
2 scallions, cut into thin diagonal slices
Preparation
- In a skillet, heat the olive oil and butter. Add the fish fillets and cook until the fish flakes easily when tested with a fork, about 3-4 minutes on each side. Transfer the fish to a warm serving platter.
- To the fat remaining in the skillet, add the garlic and ginger. Add the sugar mixed with vinegar and soy sauce.
- Combine the cornstarch and water and gradually stir into the liquid in the skillet. Cook, stirring with a wire whisk, until the sauce is smooth and thickened. Pour the sauce over the fish, sprinkle with the scallions and serve immediately.
