Ingredients
1/4 lb Bacon
1 cup Chopped Onions
3 cups Diced Potatoes
Salt to taste
1 lb Fish such as tilapia or white fish filletes
1 1/2 cups Milk
1/4 lb Cheddar Cheese
Preparation
Cut bacon into pieces. Brown bacon in large pot. Remove bacon and saute onions in desired amount of bacon fat. Once onions are translucent, add potatoes and enough water to barely cover. Bring to a boil and add salt to taste. Simmer until potatoes are just tender. Lay fish on top of potatoes and steam until fish begins to flake. Stir in milk and cheese. Heat through, but do not allow to come back to a boil. Serve with reserved crumbled bacon.
