Ingredients
1/4 lb salt pork
3 medium onions (sliced)
5 medium potatoes (diced)
3 tsp salt
1/4 tsp pepper
3 cups boiling water
1 1/2 to 2 lb fish (haddock)
1 pint coffee or light cream
3 T butter
Preparation
Cut pork into 1/2 inch cubes. Cook in large pot till crispy brown. Remove bits. Add onions - cook till tender. Top with potatoes and sprinkle with salt and pepper. Pour on boiling water. Top with fish (cut into medium pieces). Simmer 25 minutes or until potatoes are tender. Add cream slowly (stirring) and then add butter. Stir.
