Ingredients
2 c flour
3/4 c confectioners’ sugar
1 c finely chopped nuts
1 c butter, softened (must be butter)
1 tsp vanilla
Jam or preserves (raspberry is excellent)
Preparation
In large bowl with steep sides (or food processor) combine flour, sugar, and 1/2 c nuts. Cut in butter until well blended. (Food processor is ideal for this recipe.) Sprinkle with vanilla press dough together with fingers until smooth. Shape into 1" balls and roll in remaining nuts. Place 1" apart on cookie sheet. Indent center with fingertip (a small child is excellent for this task). Fill with preserves/ jam. Bake at 325 F for 15-18 min.
A baby spoon is ideal for filling the indentations.
