Ingredients
Vegetable oil spray
1 14.5 oz can diced tomatoes-no salt added
2 cups broccoli florets
2 cups asparagus
4 oz. mini bella sliced mushrooms
6 sheets thawed fillo dough
1/3 cup shredded part skim mozarella cheese
3 tbsp. shredded parmesan cheese
1/8 tsp. crushed red pepper flakes
Preparation
Blanch the broccoli and asparagus (3 min then ice bath) Cut the broccoli and asparagus into small pieces. Drain the tomatoes Preheat oven to 400 degrees Lightly spray foil covering on 15x10 cookie sheet. Working quickly stack the fillo sheets on the cookie sheet, spray lightly between sheets Spread tomatoes evenly over the fillo dough sheets Spread the vegetables evenly over the sheets. Mix the cheese and pepper flakes together and spread evenly over the pizza Bake 15 min @400 degrees. Slide off cookie sheet, cut and serve
