Ingredients

1 small-medium sweet onion, sliced

1 whole chicken (abt 3 lbs), cut into pieces

6-8 cloves garlic, crushed

3/4 cup low sodium soy sauce

1/2 cup vinegar

2 bay leaves

1 tsp peppercorns (optional)

Preparation

Place onion on bottom of slow cooker with chicken on top of it. In a small bowl, mix the other ingredients and pour over the chicken. Cook on Low for 6 to 8 hours until chicken is very tender.
