Put salt and pepper all around the whole filet - all sides.
Trim all the fat.
Knife on gray poupon mustard, a thin layer all around.
Sprinkle with dried rosemary leaves.
Put on baking tray. Roast for 20 minutes per pound at about 350. Meat should be rare.
