Ingredients

1/2 cup white sugar

1/2 cup brown sugar

12 fresh California Brown Turkey Figs, quartered

Spring Mix

Raspberries

oranges (Sweeties, in sections)

Fennel shaved paper thin

red onion, thinly sliced

extra virgin olive oil

salt, pepper

fresh lemon juice

pork tenderloin, prepared as in Island Pork Tenderloin salad

Preparation

For figs, mix sugars and season each fig piece Roast figs at 400 for ten minutes

Toss greens with olive oil and season with salt & Pepper and finish with lemon juice

Put salad on plates; add raspberries, oranges, fennel, onion

Slice pork and add to salad
