4 lb Figs

2 lb sugar

1 lemon

Preparation

Two parts figs to one part sugar. Quarter figs, or if they’re large cut them into eighths. Mix figs with sugar, cover, and let sit on the counter overnight. Add the juice of one lemon, bring to a boil, cover, and simmer over very low heat for about 1.5 hours, until they form a thick syrup. Stir now and then to be sure the mixture doesn’t stick to the bottom of the pan.
