Ingredients

8 dried figs, quartered

1 T butter

1 cup thinly sliced onions

1 tsp thyme

1 T balsamic vinegar

6 oz. goat cheese

Preparation

Cover figs with water in medium saucepan; boil, then reduce heat. Cover and simmer 5 minutes. Drain & cool. In skillet, melt butter; cokk onions 5 minutes or until the begin to soften. Stir in figs and thyme; cook two more minutes. Add vinegar and cook 2-3 minutes more, or until glazed. Cool. Spread cooled fig mixture over cheese. Serve with crackers.
